The information provided here focuses primarily on the more scientific aspects of the Kombucha culture. Some is based on my own lab tests and literature research, some may be excerpts from documents I have discovered or received from others. I have been fascinated with biology for quite a while and have invested a good amount of time studying cell and microbiology as a hobby.

“Kombucha - the Rest of the Story” is a living document which will grow over time. Feedback invited to hoffmann@stolaf.edu
